Cilantro Lime Rice

Ingredients
  

  • 2 T. olive oil
  • 1 1/2 cups basmati rice
  • 1 clove garlic minced
  • 2 1/4 cups water
  • 1 tsp. salt
  • zest of 1 lime
  • juice of 1 lime
  • 1 cup cilantro leaves chopped

Instructions
 

  • Heat olive oil in a medium saucepan on medium heat. Add rice, stir to coat in olive oil and continue to toss until a few grains start to brown lightly.
  • Add garlic and cook 1 minute more.
  • Add water, salt, and lime zest. Bring to a boil, cover and reduce heat to low. Cook for 15 minutes.
  • Remove from heat and let sit covered for 10 minutes.
  • Stir in lime juice and cilantro. Fluff and serve.
