Peel and quarter the apples, removing the core.
In a large slow cooker, add all the apples and toss with lemon juice, cinnamon and nutmeg until evenly coated.
Cover and cook on low for about four hours until apples are soft. (The large the apple pieces the longer it will take. If they are large apples I sometimes cut the quarters into slightly smaller pieces).
Blend with an immersion blender.
Allow to cool to a good temperature and enjoy!
