Cilantro Lime Rice
We eat a lot of rice at our house! Over the years I have developed a number of different recipes to add some variety to our meals. While we love the basic white rice with recipes that have sauces to coat the rice and make it more flavorful, when we are eating other types of food, we enjoy rice with a little extra flavor. Cilantro lime rice is a staple in our house with our favorite Mexican inspired dishes. I have experimented with this rice for a while and finally found the one that I like the best. A friend of mine shared one or two small elements that give it a little something extra, like tossing the rice in olive oil for a few minutes and also adding some garlic. When I first starting making this rice I didn’t do these small steps, and I find they make a difference. But just like my other white rice, it’s still relatively hands off once you get all the ingredients in and the lid on the pot. Be sure to allow enough time to rest at the end as well or the texture just won’t be quite right. (Trust me, I’ve tried to rush my rice before and it’s always disappointing).
Cilantro Lime Rice
Ingredients
- 2 T. olive oil
- 1 1/2 cups basmati rice
- 1 clove garlic minced
- 2 1/4 cups water
- 1 tsp. salt
- zest of 1 lime
- juice of 1 lime
- 1 cup cilantro leaves chopped
Instructions
- Heat olive oil in a medium saucepan on medium heat. Add rice, stir to coat in olive oil and continue to toss until a few grains start to brown lightly.
- Add garlic and cook 1 minute more.
- Add water, salt, and lime zest. Bring to a boil, cover and reduce heat to low. Cook for 15 minutes.
- Remove from heat and let sit covered for 10 minutes.
- Stir in lime juice and cilantro. Fluff and serve.
