Easy Instant Pot Shredded Chicken
Anyone else feel like getting back into the fall schedule and school routine seems jarring? No matter how much I prepare for it, it still always makes me feel like, “How did I keep up with this pace last year?” We always adjust and then it feels normal again, but the first few weeks tend to feel a bit crazy. So I thought I would share this super easy meal prep secret with you that might be helpful this coming fall. This is my favorite way to make chicken for a recipe that calls for cooked chicken.
My favorite part about this recipe is how hands off it is! When I know I am making a recipe for dinner that calls for cooked chicken, I take a few minutes early in the day (or sometimes the day before) to throw this in the instant pot and walk away. Once it’s finished, I cube or shred it and put it in the fridge until I’m ready to make dinner. While I now use my instant pot for a ton of different things, this might be one of the first things that I used it for consistently and found it so helpful!
Easy Instant Pot Shredded Chicken
Ingredients
- 1-1.5 lbs chicken
- 1 cup water or chicken broth
- salt and pepper to taste
Instructions
- Add all ingredients to Instant Pot and secure lid, set to sealing.
- Cook on manual, high pressure for 12 minutes.
- Either manually release pressure or let it naturally come down on it's own depending on what you have time for. Drain and cut/shred as necessary for your recipe. If I'm shredding, I just drain it, put it right back in the instant pot, make sure I've turned it off, and then shred it with a hand mixer.
