Korean Inspired Turkey Taco Bowls with Spicy Yogurt Sauce
As you probably know by now, we love Asian inspired flavors here! But I also like to create recipes that use ingredients I tend to keep on hand, even if they aren’t always perfectly authentic. When I do this, I make the recipes more often and I waste less food as I’m not buying specific ingredients that I will only use once or twice.
This recipe took a while for me to get right and for everyone in my family to like. My husband and I love the addition of the spicy yogurt sauce; our kids usually skip this part. But my kids love the carrots and that makes this recipe a winner for them. I also think the chopped scallions and sliced cucumbers give this such a nice fresh taste that adds great dimension to the meal. Hope you enjoy it as much as we do!
Korean Inspired Turkey Taco Bowls with Spicy Yogurt Sauce
Ingredients
- 1 1/3 lbs ground turkey
- 1 T. olive oil
- 1/4 cup packed brown sugar
- 1/3 cup soy sauce
- 3 cloves garlic minced
- 1 T. grated fresh ginger
- 1/4 tsp. crushed red pepper flakes
- 1 tsp. sesame oil
- 2 large carrots peeled and shredded
- Thinly sliced cucumber and scallions and cooked brown rice for serving
For the Yogurt Sauce
- 1 cup plain Greek yogurt
- 2 tsp. sriracha
- 1/2 lime juiced
- a sprinkle of chili powder
Instructions
- Heat 1 T. of olive oil in a large skillet over medium heat. Add turkey and brown until no longer pink.
- Add brown sugar, soy sauce, ginger, garlic, sesame oil, and red pepper flakes. Stir to combine, reduce heat and simmer until turkey is cooked through.
- Add shredded carrot and cook for a few more minutes until carrots are softened.
- Meanwhile, mix spicy yogurt ingredients together in a small bowl and set aside in the refrigerator until ready to use.
- Serve turkey and carrot mixture over brown rice, topped with spicy yogurt, sliced cucumber and scallions.
