White Cheddar Baked Chicken

This seems to be the time of year when everyone is looking for quick and easy dinners that are family friendly. As we get into new school routines, sports practices and many other activities that start up in the fall, sometimes it’s hard to remember how we did all these things in the past. Thankfully, usually after a few weeks we settle in and its starts to feel normal again. When things get hectic and routines are changing, I like to pick quick and easy dinners that everyone in our family likes. This chicken is definitely one of those recipes. It is so quick to get into the oven, and then it’s just a matter of waiting for it to bake. I also love the white cheddar flavor in this! You don’t need a ton of cheese, but it adds such good and unique flavor that we don’t often have with our chicken.

White Cheddar Baked Chicken

Ingredients
  

  • 1.5 lbs chicken tenders
  • 4 T. butter, melted
  • 3/4 cup Italian breadcrumbs
  • 1/2 T. grated parmesan
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 degrees.  Spray a glass 13×9 pan with cooking spray.
  • In a shallow bowl, melt butter.  In another shallow bowl, mix together Italian breadcrumbs and parmesan.  
  • Dip each chicken tender in butter, then in breadcrumb mixture and place in prepared baking pan. 
  • Sprinkle with shredded cheddar cheese.
  • Bake uncovered at 350 for 45 minutes until chicken is cooked through. 

Notes

What to serve with it: I keep the sides pretty simple most of the time.  We usually have this with a simple rice pilaf and steamed veggie. You could also go little lighter and serve it with a large green salad.  Both would be delicious.
