Crispy Baked Flounder
As I have mentioned before, I am constantly trying to find new ways to incorporate fish into our diet. I know it’s healthy and a good choice to eat, but it’s been hard to create recipes that everyone, including my kids, will like. I have learned two things about cooking fish throughout this quest for family friendly recipes: when it comes to fish, simpler is almost always better, and it’s often a super quick and easy dinner, which has been a huge blessing once I have found the recipes that work for our family. This flounder recipe is so easy, and my kids love it and will even eat the leftovers. We usually let them dip it in ketchup, which makes it even more kid friendly, but its healthy and delicious and has entered our regular meal rotation. You should definitely give it a try!
Crispy Baked Flounder
Ingredients
- 4 flounder filets
- 1 cup plain breadcrumbs
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. paprika
- juice of 1 lemon
- salt and pepper to taste
Instructions
- Pour the juice of the lemon in a shallow bowl. In a second shallow bowl mix together the breadcrumbs and seasonings.
- Prepare a baking sheet with parchment paper and preheat oven to 425 degrees.
- Dip flounder in lemon juice and then in breadcrumbs and place on prepared baking sheet.
- Bake for 15-20 minutes until cooked through.
