French Toast
This might seem like a silly thing to have a recipe for; many people probably just wing it for something like this. But I am someone who likes recipes. When I am cooking with kids running around, or early in the morning when I am not quite awake yet, I like definitive quantities that I know are going to come out right every time. I do not want to put forth the work and be disappointed. I like to write down what I do when it comes out well so I know I can duplicate it when I want to.
The other reason I created this recipe is that for a long time I thought I didn’t like French toast. I thought the bread was always too soggy. Then I learned, as I experimented at home, that if I dipped the bread quickly and didn’t soak it, it wasn’t soggy and was delicious! I love having this quick and easy recipe on hand. Now I usually have to double it for my crew, but its great because it is less work than pancakes or waffles and still feels like a fun and special breakfast for my kids.
French Toast
Ingredients
- 6 slices bread I like to use honey wheat
- 2 eggs
- 1/2 T. sugar
- 1/2 tsp. vanilla
- 1/4 cup milk
- generous sprinkle of cinnamon
Instructions
- Whisk together eggs, milk, sugar, vanilla and cinnamon in a shallow bowl.,
- Melt butter in a skillet or on a griddle.
- Dip both sides of the bread into the egg mixture quickly. Do not soak the bread, just coat both sides of the bread nicely and let the excess drip off.
- Place the bread on the heated and buttered griddle or skillet and cook about 3 minutes per side until nicely browned.
