Pumpkin Chocolate Chip Cookies

Let’s be honest, I am always looking for a reason to make another pumpkin recipe. They are all so delicious, warm, and comforting that I just can’t wait to create new ones and make old favorites. This is one that I have been enjoying since my childhood. The flavors are just perfect, the semi-sweet chocolate chips balance out the sweet pumpkin just perfectly, and sifting the flour and other dry ingredients make these particularly light and fluffy. Since fall is often the season for hosting events, this is a great recipe to have on hand to make the next time you have people coming over. It is sure to be a crowd pleaser.

Pumpkin Chocolate Chip Cookies

Course Dessert

Ingredients
  

  • 1/2 cup butter softened to room temperature
  • 1 1/2 cups sugar
  • 1 egg
  • 1 cup pumpkin puree
  • 1 tsp. vanilla
  • 2 1/2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1 cup semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 350 degrees.
  • In the bowl of an electric stand mixer, cream butter and sugar together until light and fluffy.
  • Beat in egg, pumpkin and vanilla.
  • In a separate bowl sift and mix together the flour, baking powder, baking soda, salt nutmeg and cinnamon.
  • Add flour mixture to creamed mixture and mix well.
  • Stir in chocolate chips.
  • Spray cookie sheets with cooking spray and then drop cookies by tablespoon onto the baking sheets.
  • Bake for about 15 minutes until lightly browned.
  • Place cookies onto wire cooling racks and cool completely.
