Rosemary Roasted Sweet Potatoes

This recipe is so simple, it almost doesn’t count as a recipe in my mind. This is one of my go-to sides, especially if I am looking to make one side dish that has a bit more substance, but is still healthy. This is the perfect choice. After having so many people ask me how to make these, I figured I would include a recipe for them here for you guys. So here is a super simple side dish for you; we love it with turkey burgers, fish, chicken and pork tenderloin, just to name a few. Enjoy!

Rosemary Roasted Sweet Potatoes

Ingredients
  

  • 2 large sweet potatoes cut into small, bite sized, pieces
  • 2-3 T olive oil
  • 1 tsp. dried rosemary
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400 degrees.
  • Peel sweet potatoes and cut up into 1 inch pieces and place on a large baking sheet.
  • Drizzle with olive oil and sprinkle with salt and pepper and rosemary.
  • Roast for 30 minutes or until potoates are soft and ready to eat.
