Applesauce Bread

I have been eating this bread for as long as I can remember. Various members of my family made it regularly, and it was always a treat. When I went to make it myself, I found that the recipe was a bit cryptic, as old recipes handed down in families often are. It also had a few ingredients that weren’t my favorite. So I made a few simple adjustments, and I believe it is just as good, if not better, than what I used to eat growing up, but with a few cleaner ingredients, which is always a win in my book. This is great for a little treat after dinner, to accompany breakfast, or to bring to a potluck. It is always a crowd pleaser at any time of year, and even better in the fall!

Applesauce Bread

Ingredients
  

  • 1/2 cup (1 stick) butter softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 3/4 cup all purpose flour sifted
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 cup unsweetened plain applesauce

Instructions
 

  • Preheat oven to 350 degrees and spray a 9×5 inch loaf pan with cooking spray. 
  • Place butter and sugar in the bowl of your stand mixer and beat on medium speed until light.
  • Add eggs and vanilla and beat until light and fluffy.
  • In a medium bowl stir together all purpose flour, salt, baking powder, baking soda, cinnamon and nutmeg.
  • With mixer on low, add about one third of the dry ingredients to mixer and mix until blended.  Then add about one third of the applesauce and mix until blended.  Continue to alternate between dry ingredients and applesauce until all is incorporated.
  • Pour into prepared loaf pan and bake for 55-60 minutes until cooked through.
  • Place pan on cooling rack and after about 5-10 minutes, turn bread out of the pan onto the cooling rack and cool completely.
