Chili Lime Chicken

Somehow summer has really gotten away from me! I took an unintentional vacation from blogging for the last month or two! We have been busy having lots of fun as a family and doing lots of cooking as well. We’ve had lots of great food, and I can’t wait to share some of those recipes with you soon! Lots of fresh and light recipes with food from our garden, as well as some yummy summery desserts for lots of birthday celebrations!

I wanted to quickly share this recipe with you because it is such a simple, easy and versatile recipe. I feel like all summer long I have been searching for things that are quick and easy so that we can keep up with all the fun outings and pool days and activities that the kids want to do. While at times I miss having the routine that allows me to prep meals and be creative earlier in the day, I’m embracing the summer fun and chaos because fall, school routines, and all of that, will be here before we know it!

I have made this recipe countless times both in the oven and on the grill and it always comes out great! Hope you enjoy it as much as we do!

Chili Lime Chicken

Course Main Course

Ingredients
  

  • 1 lb chicken tenders
  • 3 T. olive oil
  • 1 1/2 T. red wine vinegar
  • Juice of 1 lime
  • 1 t. chili powder
  • 1/2 t. paprika
  • 1/2 t. garlic powder
  • 1/2 t. salt
  • fresh cracked pepper

Instructions
 

  • In a medium bowl, whisk together all ingredients except the chicken.
  • Add chicken and toss until all the chicken is coated.
  • Cover and refrigerate for about 2 hours.
  • Preheat oven to 400 degrees and line a baking sheet with foil.
  • Remove from bowl and discard remaining marinade. Bake for 30 mins until cooked through. (This is also great on the grill!)

Notes

Helping Hands: While this is a meat recipe, the marinade can easily be made with kids.  My son loves to whisk all the ingredients together before I add the chicken.  
What to serve with it: This is such a flexible recipe!  We serve it with cilantro lime rice, rice pilaf, a wild rice blend, roasted veggies, etc.  I have a great roasted vegetable couscous recipe that I will share soon that works great with this as well.
